Freshwater crayfish provides a surprisingly sweet-flavoured flesh that is ideal in soups and bisques, but equally as popular when barbecued, steamed, grilled or pan-fried, in or out of the shell. Yabbies provide an exciting and distinctly Australian alternative to the table.
Freshwater crayfish rivals the popular prawn cocktail when combined with aioli, pesto or citrus dressings. Use the sweet meat as stuffing for meat dishes such as veal or beef. Freshwater crayfish makes a flavoursome terrine and is also popular in seafood platters as an alternative to prawns, rock lobsters or crab.
Freshwater crayfish (known as crawfish in the USA) is also extraordinarily popular in the West Indies (gumbos) and South America (in a garlic, parsley and shallot stew). The meat also combines deliciously with saffron, capsicum and thyme.
